Also check the vsync settings and disable it.
I have it set to 'Maximum Performance', although it doesn't recognize 'GunZ' as a game so I don't think it applies the settings to it.
    V Sync is disabled.

See above in regards to Geforce Experience.

It recognizes Call of Duty / CSGO / Blade and Soul.

    COD - 91FPS locked - High
    CSGO - 200 / 230 FPS - High
Blade and Soul - 60 FPS locked - High

Possibly although there is no firmware pre installed, it came with Windows 10 pre-installed as requested and that's all.

some brands limit the fps with firmware. firmware is not installed on a hard drive or ssd. it is like the bios. have you tried getting a game running above 600fps?

If I switch the resolution within Gunz to something slightly lower than 1980 x 1020 it'll goto 700 capped. However same again regardless if its in High settings or Archetype it remains steady fps locked. However if I go to the lowest resolutoon possible fps will only goto 400, so strange because lower the resolution youd expect higher fps

I know the GTX980m card is being used as geforce tells me that is and ive also set it up so everything runs through it.

    Hello Notorious.

Graphic cards usually have 3 stages. Min-normal-max.
Since gunz is old game it might not use full power of your graphics card, so it might be stuck on medium setting.

    Download Msi Afterburner.
Open it up and play gunz
Check if your gpu and cpu had 100% usage.

Also set gunz priority to real time.
